My husband loves to eat bacon, steak, and pretty much any other meat. He does not love to eat any vegetables (except maybe Cesar salad with bacon bits on it). As a wife and health care provider, I’m worried that my hubby might not be getting enough of the good nutrition that comes from eating green veggies, so I’ve created these delicious recipes to help him out. Even he was surprised by how much he could love broccoli, green beans, and asparagus.
Garlic Parmesan Broccoli
Here’s a delightful recipe for broccoli that I invented one night when I wanted to jazz up some broccoli. Serves two.
Ingredients:
1/2 pound frozen broccoli
Dash of garlic salt (opt for garlic powder if you have high blood pressure or otherwise need to monitor your salt intake)
Dash of dried Parmesan cheese
1 tsp. olive oil
Place all ingredients in a small saucepan and cook on medium-high, stirring frequently until cheese starts to melt and broccoli is fully cooked.
Bacon Green Beans
This is, of course, not my healthiest recipe, but it sure is tasty! My husband loves that the green beans taste like bacon! Serves 2-3.
Ingredients:
Bacon
1 can French cut green beans, drained
Reserve 2 slices of bacon, crumbled
This recipe starts in the morning when you cook up some bacon for your family. Save the grease and pour it into a small saucepan. Add green beans and crumbled bacon, and put in the fridge until you’re ready to make dinner. At dinner time, heat saucepan over medium to high heat until mixture boils, then simmer until supper time. Usually, I don’t remember to heat this up until dinner is just about ready, but you can also simmer this for 10-20 minutes for a more robust bacon flavor.
Asparagus Casserole
I initially got this recipe from my mom and then added my own tweaks. I love the flavors… I think my hubs mainly loves the bacon! This recipe serves 4-6.
Ingredients:
1 bunch of asparagus, diced in 1-inch pieces
3 Tbl. butter
1 tsp. onion powder
1/4 cup bread crumbs (I’ve also substituted oatmeal, which is great, too)
2 Tbl. grated Parmesan cheese
1/2 tsp. salt
1/8 tsp. pepper
2 Tbl. bacon bits
Preheat oven to 375 degrees F. Grease an 8×8 inch pan and place asparagus on the bottom. In a separate bowl, mix the other ingredients together and pour on top of the asparagus. Cover with foil and bake for 45 minutes.
